The ice cream was born in Italy and is recognized all over the world. Many may not know that it is a product with a long history, intertwined with the history of Italian cuisine. The perfect blend for ice cream as we know it was created in 1686 by Francesco Procopio dei Coltelli (considered the "father of ice cream"), a Sicilian chef who lived in Paris. Procopio perfected an ice cream machine he inherited from his grandfather and in the same year he opened a café, Café Le Procope. This is the oldest café in Paris and has been frequented by famous artists and politicians, such as Robespierre, Voltaire and Victor Hugo. The café became a restaurant and has worked to this day: visit it on Rue de l'Ancienne Comédie, 13.
