Durum wheat Black Elk Cappelli is a historic variety of durum wheat that dates back to the early 1900s when Nazaremo Strampelli started some experimental tests on the fields made available by the Marquis Cappelli, obtaining the so-called "chosen seeds", including Cappelli. Organic Cappelli wholemeal semolina Black Elk comes from Italian durum wheat. The stone milling of Cappelli durum wheat flour allows to obtain a semolina with an irregular grain size. It is naturally a source of fiber and ideal for the preparation of bread and pasta. Durum wheat selected in 1915 by Nazareno Strampelli from a North African population "Jenah Ratifha" - originally from the same areas where the Romans had spread the cultivation of durum wheat 2000 years ago and dedicated to the homonymous Abruzzo senator.
