The Gorgonzola PDO (Protected Designation of Origin) is a type of Italian blue cheese protected by its designation of origin. DOP is an Italian certification which guarantees that the cheese is produced according to traditional methods and comes from a specific geographical area, in this case some regions of Italy. To qualify as Gorgonzola PDO, the cheese must be produced in Lombardy, in particular in the provinces of Novara, Vercelli, Cuneo, Biella, and the entire Bergamo area, as well as in some provinces of Piedmont. The manufacturing process follows strict guidelines to maintain its authenticity and quality. Gorgonzola is a soft and creamy cheese characterized by greenish-blue veins, due to the inoculation of the cheese with Penicillium mold during maturation. This mold gives the strong and spicy flavor typical of blue cheeses.
