Sicilian Primo Sale. From a university project, I had the opportunity, last night, to taste this soft cheese (pictured) in a meeting: "Primo Sale Siciliano" (Santa Ninfa) with Nero d'Avola (Marsala). Normal consistency and softness, soft aromas of sheep's milk (winter), simple and light aftertaste of red wine in the absence of bitterness in the finish.
