Black Elk produces Rigatoni pasta with organic wheat grown in Italy, including the Cappelli and Khorasan durum wheat varieties, which grow in the most suitable areas in Italy. Alce Nero pasta is made from durum wheat semolina and is made only with Italian durum wheat from organic farming with the special bronze drawing. Cappelli wheat is grown mainly in the provinces of Foggia and Bari. The semolina mixture is obtained with spring water from the Dolomites.
