it “Speck” is a type of smoked and cured salami originating from the Alto Adige region of northern Italy. This cured meat is prepared using the so-called "loin" of the pig (the back part of the pig) which is cured and smoked. The production process involves the use of a mixture of spices, including garlic, juniper and pepper, which give the product its characteristic flavour. After curing, the meat is cold smoked, usually with juniper wood, which helps give the “Speck” its distinctive flavor. Next, the cured meat is air dried to complete the process.
